It will sync with where ever your source of email is, Outlook is a way to read email. If you have some free POP3 account that doesn't support calendars and everything is in a local .pst, then there is no way to sync that I know of, but someone else my have options. This will also mean you have no backups. If nothing else, you already have an outlook.com email with your Microsoft account, use that to store calendar and contacts and it will sync with the phone. You can then also forward or save your pop3 emails to that account.
