Deleting your Microsoft Account means you give up all the data stored there. OneDrive files, Apps purchases and whatever contacts, email or calendar data syncs only to the Microsoft Account, etc.

As agentmikey said, you have to factory reset your phone. You can't just erase or change the Microsoft Account on a running device. It can only be done via set up.
