Go to the app list and hold the app "tile" a drop down list will appear . There you can uninstall it. But not all apps can be uninstalled.

You can also go to storage sense and then sd card and apps click uninstall

According to the store I have 440 apps. Most are apps I tried and didn't like. Those are the ones I want to get rid of. I want to "unown" them.

Sorry that is not possible.
The only way is do a factory reset and use a different Microsoft account.

As mentioned earlier, you can simply uninstall an app, however you CANNOT 'unown' them on the Windows Phone App Store, maybe in future, just not now...
