Can Windows 10 or Cortana open Word, Excel or other personal documents and access the info within?

Lots of good features o Windows 10 but I hate the invasive aspect. I do not want the system or Cortana to know or access my contact, email or document data. Do they have that ability and can it be eliminated?

Turn off cortana and remove your MS account from the account (only for pc/laptop)
