Is there a way to prevent unwanted apps from being reinstalled after recovery of Windows Phone?

everytime i recover my phone i get back all the apps that i've uninstalled long ago.
Is there a way to prevent this?

Create a new backup. Or do you want to not having any apps installed? In that case, don't resume the backup when logging in, that's it.
