Should I update my Lumia 1520 now to the latest build of windows 10 mobile now from 8.1? Is it stable enough as a daily driver?

If you waited this long would suggest waiting a little longer as WM10 is supposed to hit General Availability mid December. By then there should be information on how the roll out will proceed.
