How do I put my photos back in the folders I had in Windows 7?

Windows 10 was loaded on my PC without my permission. All of the folders containing my photos were deleted and the photos are now in one giant file according to date taken, except the many that are out of sequence. I need to have the original folders restored so that I can find a photo without scrolling down the stack of several thousand pictures.

did you check in drive c > windows old folder?
And are you able to sort pictures by other parameters like date taken or date modified?
