An app to use as a Diary, any suggestions other than OneNote??

I've heard really good things about Diarium. It's fairly feature rich. And it's a UWP. Not sure about ink support. Price point is a bit steep for an app, but I think it's worth it for the features and the support it receives. Also, there may be a trial of some kind available.

The trial version lasts for 10 days before you have to buy the app in order to add new diary entries.

There is some kind of ink support in the way that you can add ink drawings as an attachment to an entry. And I have plans to add ink support in the way that it translates the written ink text into "digital" text via text recognition. Still have to think about the how to add this to the UI in a nice way.

This is fantastic. A developer creates an app that fills in a gap. Not only that, the app is fantastic. And then on top of all of that, the developer is actively involved in the community.
