I want to have two windows edge windows open on the same monitor

When you have Edge open, but not maximized on the screen, open a new blank tab and drag it out side of the Edge window. It will open that tab in a new window.

You can also use CTRL+N, or click or tap on the menu dots and choose NEW WINDOW.

Right click on the Edge icon on the taskbar and click on Microsoft Edge. It will open a new window.
