Yeah, the backup date was yesterday so they should be up to date. Oddly enough when I woke up this morning it was up to December and now is almost up to date. Looks like it just takes a really, REALLY long time

It was super weird. I ended up doing a reset again using the button combination detailed here Resetting your Windows Phone 8.1 | Windows Phone How-to (Canada) and it looks like it went back to normal. Hopefully all my texts show up this time.
