Is there anyway to change the light yellow color of the highlight in Windows 10 explorer?

None of the settings in "Personalization" appear to effect it.

Could you screenshot what you mean specifically?
The only highlight I can currently see is on items in the filetree, which for me is highlighted in blue.

No screenshot needed Omoronovo is using the "Files" app which changes based on your phones theme and the OP is using the "File Explorer" app which keeps the standard yellow color for the folders

Both apps are made by the MS team

Hmm, I wasn't actually referring to Windows 10 Mobile at all - The first post and topic mentions windows 10 explorer, so I assumed he meant explorer on windows 10 (desktop).
