How does one do this on Windows Phone 8...

Send High Quality (Full Quality) Photos via eMail?

I am coming from iOS, and it would ask what size you want to send.

As far as I know it always sends the full size photo when you attach one. I'd be rather annoyed if this wasn't the case.

It is not the case. Photos are emailed at much lower resolution than the actual file size. BlackBerry OS, like iOS, would also ask you what size file to append. WP8 gives you no choice (that I could find.)

I've looked all over the OS and didn't find an option. I know there is an option for uploading to SkyDrive.

I usually share a sky drive link pictures taken at full resolution and quality are too large to email these days.

Got to disagree with the "too large to email" comment. The full size photos are maybe 2.5 megabytes or so, and are easily handled by email. Users should be given the option of what size to send.
