As the other post stated, this is a very vague question. If you are referring to Outlook.com mail and looking to set up automatic replies similar to Exchange's Out of Office, then this link will show you how. Mail App - Send Automatic Replies in Windows 8.1

Keep in mind that this feature may not be supported on your email server/service. Best to check with your provider. Some ISP based mail systems can accomplish this via their web mail application.

Block mail? Do you mean email??? Keep it from coming in? Stop notifications?

What email service? What email client (app/browser/what)?

Your question is very vague... We really need more details to help fully.

If you don't want to see your email while on vacation, turn off any notifications, log out, do not log back in and just stop looking at it. It's not like your mail from the post office. You stop that delivery when on vacation so no one takes the mail out of the box or sees that it is piling up and realize you aren't home so they can break in... Your email doesn't have the same vacation issues as your physical mail.
