I want to clear out space, and I've heard that you can do that by deleting temporary files. But what does that mean. What does it erase?

Temporary Files can be a variety of things, but ultimately, I can assure you that these are files that you won't miss. Or notice are gone.

Read closer. You can delete temporary files that are not in use. You can't delete them all.

Temporary files are files made during, say, an installation. They are meant to be deleted but they can sometimes get left behind. I can guarantee you won't need these files and that it is 100% safe to delete them
