Editing and Calling Contacts in phone book

When I open my phone book I can't just edit my contacts or look at the phone number they are under. If I tap or even hold down on contact it automatically dials the person. How do I turn off the on touch dialing?

Are you sure you're using the contacts (people) app? Sounds like the behaviour you get in the actual phone app/dialer.
In the dialer tapping on an entry directly initiates a phone call. On the very right of each entry is a small icon. Tapping that goes to the contact information, from where you can edit said contact. But for an overview of all contacts, just launch the contacts/people app.
