Rolling back to a previous build on windows 10 mobile

is there a way to roll back to a previous build on windows 10 mobile (on a 8.1 sold device)?

Don't think so, though I think I read somewhere that you may be able to choose 8.1 or 10 when using WDRT. Run WDRT and see what it offers you, you don't have to proceed with the recovery if you don't want to.

you can go back to 8.1 using windows device recovery tool but if you decide to update to windows 10 mobile using upgrade advisor, you would eventually land on the latest officially released build

Any reason why you wish to go backwards?
