Recommendations on building a plex/kodi server

[FONT=&quot]So I want to get into the Plex/Kodi game. I am currently converting my DVD/Blu-ray collection to digital and now I need to be able to store and watch them from my various televisions in the house. I want to build something but keep the price reasonable and not get carried away with way too much performance. I will not be gaming on this machine and will use it for Plex/Kodi and file storage. [FONT=&quot]AMD Ryzen 5 3400G[/FONT]
[FONT=&quot]16GB of RAM[/FONT]
[FONT=&quot]Start with 2 M.2 Drives (for OS with redundancy) and 2 enterprise grade hard drives (again with redundancy)[/FONT]
[FONT=&quot]I would have a max two streams going at the same time. [/FONT]

[FONT=&quot]Would this get me through with room to grow? Any opinions? [/FONT]

Do you have a machine for doing this? I'd like to do the same, but very tedious doing this on the PC one at a time.

Right now I'm using my Surface Pro and my wife's Macbook in the evenings or mornings to do any conversions so it's not ideal and is taking me forever.
