So instead of deleting all of the episodes in the podcast, I deleted all but the one that showed (so all the ones that the Windows Phone app said were there but Music+Videos didn't show) and then redid the sync and now all 18 episodes in that podcast show. I hope that I don't have to keep doing...

Updated to 8.0.10211.204 and the problem is unchanged. If it helps, it appears that it only shows the first file in alphabetical order.

I had the exact same issue, and suspecting that it might be because I had already sync'ed some podcasts using Windows Phone app, I deleted all of podcasts from my Nokia 920 and now I am able to subscribe and download podcasts directly on the phone. It appears this WP7 issue has not been fixed...
