Just wondering how many Surface Laptop 3 owners here still don't have the 2004 update yet. It is September 2nd and mine is still not getting it while giving me that wonderful "The May 2020 update is on it's way" message.

You're not missing anything, very few new features so unless you're itching to try new Cortana and/or saving virtual desktops is important to your workflow, I recommend sitting it out entirely at this point and wait for 20H2. My SB2 was "approved" for 2004 a couple of weeks ago and it's been wonky since. Cortana responds to random sounds as if the wake word was used and it occurred so frequently I disabled her from responding to it. Plus I've had at least a half dozen random blue screens and reboots and Citrix sessions freeze regularly. All were never problems before, especially blue screens/reboots which I can't remember the last time they occurred prior to 2004.
