Offline Profile Mode without removing Sim

There are occasions in which I use IP deskphone for meetings with my clients with speakerphones on. I prefer to record those conversations using my Lumia 900's voice recorder. But in case if I receive a call or SMS that signals causes disturbances with the speakers. So just like all my previous phones how can I set my Lumia 900 to offline profile mode (not silent mode) so that signal dont cause any disturbance when my limia 900 is close to the main deskphones while recording?

OK. I am aware of flight modes. I thought just like previous devices which had offline mode as well as flight modes (just like my previous Nokia N900). I think with offline mode the devices doesn't receive signals but with flight mode it still catches signals and the other parties will hear that phone is switched off.

Please Guide me if I am wrong

Flight more should turn off all the wireless hardware (wifi, phone, etc), i'd imagine any phone that didn't do that, would not pass FCC certification.
