The GPS will not work in flight mode. Mobile data or WiFi is required.

Your phone shows your location on the map using GPS, GLONASS, A-GPS, Wi-Fi, or network (Cell ID) based positioning. The availability, accuracy and completeness of the location info depend on, for example, your location, surroundings, and third party sources, and may be limited. Location info may not be available, for example, inside buildings or underground.

Actually per that source, GPS should be fine in flight mode. If you are doing a cold start GPS fix in flight mode (ie, it's not had a fix in your current location and you've moved significantly since your last fix) it can take upwards of 5 minutes to get a gps fix. Not always, but that's a worse case number. Normally the GPS will use other location information via 3G or wifi to get a course fix good enough to narrow down the guesses as to where the GPS sats are, so it can get a fix in seconds. If your 3G location isn't provided by your carrier or is inaccurate, that could mess up the initial fix. Once it has a fix it should hold it unless the GPS sats are all obstructed.

If you're in a city, or dense woods, or in a valley, or it's raining frogs that can degrade/block the signal/LOS to all or all but one satellite, which will cause you to loose sync.

FernandoDB, where are you located on the globe?

I cannot see it in person so I cant really tell. But tiny gps chip we have in the phone is greatly depends on the weather and the environment. If you are under thick clouds, long time under a shed say bridge, tunnel, roof or even under surround tall buildings you might loose signal. Here Maps and related product does seems to priorities GPS signal which is why switching back and forth might have some delay in between. But generally the switch is fast enough that you hardly notice.
