Problem with language settings

Hey guys!

I hope you can help me save with an issue I have with a Nokia 920 I bought from ebay
I actually found about the offer that the seller had thought the WP central and ordered it as a gift for my mom.

The phone as you can see says that is unlocked.

Now I am planning to send the phone to my mom in Greece and the first thing I tried to do is change the display language to Greek.
To my surprise the phone gives me only an option of 4-5 languages as opposed to my nokia 1520 that has a list of more than 20 languages including Greek.

Does anybody know why is that? What are my options here?
Will the phone give more options if i insert a Greek sim card?

If you want more languages you're gonna have to flash it to another firmware since it's an AT&T phone and only a few languages are installed on them...
