Well you could just unpin it.

Or if you have Windows 8.1 just go to people --> long click on your picture--> click on your picture again and from there you may choose a new one.

If you don't want any picture at all i think you have to delete your contact picture on Microsoft's website.

I believe that you have to delete it on your actual Microsoft account or whatever account currently has your picture

Another way is to take a picture with your camera, but with your finger on the lens so the picture turns out all black. Then change your picture on your profile to the black picture. Go to People hub ---> Tap on your picture ---> Tap on "Find Another" ---> Choose the black picture you took. Done.
