Will I be able to open all my Office documents on a Windows Phone 8 device?

Probably.

Now, older formats will open as read-only I believe. (.xls, .doc...)
In Windows Phone 8.0 and 8.1 you cannot open password protected documents. But in 8.1 Update 1 you can.

In the upcoming Windows 10 Mobile, the Office apps are shaping up quite nicely.
