After upgrading to Windows 10, I can't open Word and Excel attachments in Outlook now. Why?

Please provide a specific error or what happens.

Save an Excel and Word document to the desktop, right click each one in turn, select properties, change, then select Word/Excel. Done. Your default has changed.
