I was given a broken Lumia 900 from a friend(phone would not turn on). Found out it was still under warranty and just got it back from Nokia. To my surprise, I found out that this particular Lumia 900 is a AT&T store demo unit. I've tried to do a factory reset but it keeps installing the store demo UI (apps and accounts) every time I do. Is there any way to stop it from installing the store demo UI? like upgrading to 7.8, or do I have to do this the hard way and flash the phone?

details:
OS: 7.5
OS version: 7.10.8112.7
Firmware: 2175.1002.8112.12084
Hardware: 112.1914.2.0

Nice story. What did Nokia do for the device? Besides just send it back to you?

Get a hold of the Nokia 7.8 update and flash the Lumia via Nokia Care. There are several threads around here with the info you'll need to do it. Or, and this is what I'd do first, get Nokia to give you another phone. Evidently they didn't really do much when you sent it in.
