I feel the lumia camera has lost its zoom clarity to some point...

I guess the only way is by hard resetting your phone, and not updating the app

but that's not previous version, that's the ancient version, and is a bit much.

you can't downgrade I believe. there might be options but I'm not sure.

Well you can always search for a xap at winphonehub.org, and deploy manually into your phone after developer unlocking it.
