You can set a custom ringtone for an incoming call. How do you set a custom sound for a text message or an email?

I believe that's not possible yet. It's supposedly coming with windows phone 8.1

You need to be on GDR3

Yes as 11B1P said, you need to be running GDR3.

With that on your Phone you can use the People Hub to set custom sounds per contact for Ring and Text Tones.

Sadly you can't set per-contact tones for Email, but you can change the generic email tone to whatever you wish.
