Will I be able to run all the apps in lumia 625 since it has 512 mb ram? is there still minimum requirements for 1 gb ram or all apps will work?

Most of the apps/games, like 80% will work fine on 512mb devices. But if you are into high end games you should get a 1gb device.
Also popular games such as Subway surfers & temple run 2 are only avaliable for 1gb devices.

so lumia 525 would be a better choice until a new low end lumia with 1 gb ram is launched

There's a version of subway surfer that can run on 512 ram devices
