Every time that I navigate away from a webpage and return (FB, amazon, etc) I have to put in my login credentials again. I cannot use the phone like this. Is this just an issue with my phone's Edge or are other people having this? Any potential solutions? I tried clearing my browsing data but it tells me "some data couldn't be cleared. Please try again." Ugh!!

a lot of my sites stay signed in if they allow it, amazon, linkedin, a personal site I run... make sure to click the Remember Me? box if available,

Download opera mini Microsoft in a 20 year partnership with them apps.opera.com in edge then click opera mini which will direct to windows store for the app
I use opera mini to stay logged in with Amazon Facebook etc etc or download coc coc browser its the same as chrome
