Privacy Personal Laptop Used for Work

I am using my personal laptop for work. They used my Outlook account. When they set up the work account, I had to acknowledge that they will control my computer. If I create a different account and log out from "theirs" will I have control with my new account? Then, I can sign in and out of accounts as desired? Or, should I install Linux with a partition?

it depends upon the level of admin privileges on your laptop. Consult your IT department and then you can do all these things which you have mentioned in your post.

generally, everything depends on what you agreed to. I know the company I work for will let you get your work email through outlook but they want the right to check on your usage of company files on the computer at any time. It would not make any difference what os is installed - they will will have control and can also wipe the whole drive. .
