So I was wondering if "Flashing" created any problems like an app not being found? Can the update be rolled back? Can I reflash the older rom?

No it shouldn't have any effect on app availability besides the Nokia GDR2 specific apps.
No you can not roll back the update.
No you can not reflash the older rom. (well not in a safe and easy way...)

Soft reset the phone, if it still freezes a lot, why not hard reset?
