Why Windows has struck with the version Windows 10.Will there be Windows 11 next year?

Microsoft has moved to a release model that does not emphasize large releases like XP and 95. Instead, we will continue to see more numerous but overall smaller updates twice a year. So there won't be an "11", but there will be more upgrades.

Eventually, I'm willing to wager they'll drop the 10 designation and stick to just Windows - like macOS.

I'm sure they'd like to but branding will be a problem. "Windows" obviously means more than "Microsoft Windows" so for example, an internet search includes non-Microsoft results. I just did it on Bing and while the first result is Microsoft, the second is for Home Depot. I'm guessing that type of "clutter" isn't acceptable to them.
