windows 10. Couldn't find documents. Finally found when I go to open them, they open for .5 second

I downloaded windows 10. Couldn't find documents, pics, etc. Finally found, at least some, in c/users/my name. But when I go to open them, they open for .5 second, then they're gone again. They will not stay open. What's going on???? I'd rather just go back to windows 7 but it has been slightly over 30 days and, frankly, I'm afraid of losing all my files!!! What can I do?? I also read that Windows 10 is going through more changes and it could be possible that anyone on Windows 10 could lose their files as new changes are being made!! HELP!! I updated to Windows 10 on Sept 22.
