I upgraded from Windows 10 Home to Windows 10 Enterprise, and I'm not sure what happened but I can't defer updates now in PC settings. I then went into GPedit and changed the settings in there instead. Is there something that I messed up or a Windows 10 bug causing this?

I don't actually think it's a bug. Maybe this feature is disabled in Windows 10 Enterprise somehow.

In the mean time, you can turn off Windows Update service to prevent updates download & install. I know it doesn't look like Defer Upgrade feature, but if you want to turn off updates, that's the only option.

This is someone posted in Microsoft site:

If you set the telemetry to 0 (Enterprise only) then the Defer Upgrade setting will disappear from the GUI! The Defer Upgrade GPO has no effect if you have set telemetry to 0. I really don't know what MS was thinking with this step... and I don't want to understand anymore...
