I usually don't leave my computer on overnight meaning I bring down new insider builds during the day. The problem with this is it brings our internet to a crawl (I do not know why this does it). Is there a way to stop Windows automatically starting a download of a new build and just get it to notify me there is a new build avaliable?

Yes. I searched and found a way through the policy manager.
