Thought I'd share something I'd found. For those wondering, I'm using Cortana UK.
Anyways, any time you say "Hi" or similar to Cortana, she replies with one of her normal greetings. Underneath this in grey, however, is a line saying "Try asking 'What's up?' and try again tomorrow, I'll have something new."
It was May 4th when I tried this, Stars Wars Day, and her reply to this was "It's Stars Wars Day. May the fourth be with you!" and she would turn into a Yoda symbol. Again, with the smaller grey writing, she suggested "Try asking 'What's with the trivia?'" and in doing so she tells you about how each month she is focusing on different themes of human achievements, this month it's apparently space. This appears to be a daily thing - today, for instance, she's talking about a laser being bounced off the moon 53 years ago today.
