There are quite a few budget Atom 3735g machines out there all of a sudden and was wondering if the 1GB version would suit my needs.

    Office Documentation & Automation:
    - VPN to remote fileserver
    - Office 2013 local install
    - Excel 2013 VB programming
    - iPython (Web interface REPL)
    - 1080p Youtube on Chrome

Would the 2GB be able to handle:
    - NI Labview, Multisim, & Ultiboard

I know a Surface would be better suited but the 1GB is $99 and the 2GB is $175 while a surface is 3x more used.

None of these should be a big problem, but really check the system requirements on your software before considering.

    Multisim:
    - Pentium 4/M class microprocessor or equivalent
    - 512 MB of memory
    - 2 GB of free hard disk space
    - Open GL capable 3D graphics card
