I finally found a way to uninstall system apps from the phone. You have to turn on developer mode, turn on Device discovery and Device Portal. After that, the phone will show you it's IP address, which you can hit with a web browser via WiFi.
Via the browser, you can view all the apps installed on your phone, install and remove apps, stop/start apps, etc.
The problem, for me, is that I can't always find the apps in the store to reinstall them. Again the "Gadgets" app will not show in the store, no matter what spelling I use. I believe it's because I don't have Microsoft/Lumia phone, and the store tends to filter out apps that are not compatible or not for specific phones.
The "Sysapp Pusher" doesn't show the "Gadgets" app in any of it's lists.
The other thing with turning on developer mode on the phone and reinstalling apps, is that it would be nice to be able to download the apx file somehow to a PC then push install the app to the phone (really nice to reset the "Store app").
