I don't think you can roll back previous windows 10 you can use recovery tool to get back to windows 8.1 but if you update it again it will come to same build. One crazy thing you can do I guess use recovery tool to get back to windows 8.1 and then change the registry to a model of unsupported (for creators update like 535 or 730 etc) device and update the device you will get AU

Download the Windows Device Recovery Tool on your laptop or desktop if you do not already have it.Use it to roll back to 8.1 ,then use Upgrade Advisor app from 8.1 Store to upgrade to Windows 10.You will first get a build of Threshold 2 (10586.x).Then you can go to Settings >Phone updates and check for updates to get Anniversary Update build.
If you are on Insider then remember to select Stop Insider builds and unlink your account from Insider.
However,if your phone is a supported one then you will again get Creators Update.In that case a hard reset might help you.
