I am upgrading to a 1520. And the battery on my iPhone is dead. So was thinking if trading into Microsoft store for $200 and using part of it to buy the 520 to use to play music when I run. I want to know how spotify works on this (I will be using offline) will it work well enough or be very laggy? Also is there a difference between 520 and 521?

spotify does require spotify plus or whatever thats called. can't say since I haven't tried it personally.

The 520 is the int'l/AT&T model. It's the standard model.
The 521 is the US T-Mobile variant with support for T-Mobile bands.

The only difference (other than what carrier its locked to/compatible with) is that the 521 is a few mm taller to make room for some hardware changes under the hood, meaning that cases for the 520 won't fit properly and visa versa.
Also meaning your choice of color shell is limited to white AFAIK.
