Do i have to connect to wi-fi for updates or can i use my data? Also what is crickets nokia lumia 360 8.1 latest update version? One last thing can you tell me how to put my apps on my start screen into folders?

Yes... Connecting to WiFi would almost always be required when updating due to file size.

According to these tables (Availability in North America - Microsoft - Global) Cricket has yet to push an update to the 630...

And you would need 8.1 Update 1 to use Live Folders on your Start Screen.
