Can someone explain the permissions that apps need?

I'm noticing an increasing number of apps wanting far more permissions than I think they need. For example, I was going to use today's offer on the WPCentral app, but then I saw it wants access to my media libraries, microphone, phone dialler, speach and camera - amongst others, but they make more sense.

I've also not updated my preferred weather app, Weather Duck, to the latest version because it's increased the permissions it wants to include my media libraries and the phone dialler.

I've also seen it on Microsoft apps: Why does Photosynth want access to my appointments, contacts, Xbox, microphone and phone dialler?

I won't install an app if I consider it's after more permissions that I think it needs to do its job. It all seems a bit Android-y where you expect every app to grab and sell as much data as possible. I wish I could choose to selectively deny access.

What triggers these permission requests and how can I tell which apps are good?
