Can anyone recommend online classes to better understand, use and organize Outlook?

My folders and ribbon options keep changing on their own. The FAVORITES designation disappeared. But when I go back to reset a favorite, the selection indicate the folder is already there. I must be doing something wrong.

are you using outlook for desktop or outlook online?
