I don't want or use the new material being sent in the update. I just want a basic system, no games, social media and especially the Cordillia or whatever it's called feature. It took forever to turn it off the last time.

If you have a Pro/Enterprise/Education version, you can defer it for some time but in the long-run, no. Also switch to the Semi-Annual Channel in the update settings which is several months behind the main public release.

If I were you, I would either go to Windows 8.1 (security patches through 2023 I believe?) or look into the hard-to-get Windows 10 Long-Term Servicing Branch (LTSB) which is exactly what you want, but it's not officially available to normal consumers.
