Breaking a mirrored array - Windows Dynamic Drive

I'm posting this question here because I have a custom-built rig, but it's quite possibly just a general Windows OS question. When I had Windows 8 Pro 64-bit installed, I paired two WD Black 640GB drives with Windows Dynamic Drive*; 120GB as RAID0, the rest as RAID1. Win8 has been wiped, but the new installs (yes, repeated wipe/installs) fail to read them - the striped array doesn't seem to exist now, and the mirrored array is being read as two foreign drives.

Can I simplify things and just break this array by unplugging one of the physical drives and copying the data from the other onto a fresh drive?

*Please, no laughing - my 1st foray into RAID. :eck:
 
I remember hitting Alt+F10 during the boot sequence to bring up the RAID config which allowed me to break my RAID 0. I had to also set my HDD to boot back in AHCI from RAID from within the BIOS.
