Are you referring to the email address in your email+accounts under phone Settings? If yes, you can simply tap and hold on any email account (except the Microsoft Account) and wait for "sync" and "delete" to appear. For the Microsoft Account, however, I'm afraid you would have to reset your phone in order to change it. Head over to Settings > about > reset your phone. You'll be asked for confirmation at least once before it proceeds in wiping all of your data.
