How to disable live tile for certain app and where is the " Data Sense"?

Data sense isn't here yet. To prevent an app from updating the tile in the background go to settings, swipe to applications and select background tasks.

Data Sense is only implemented on Verizon right now, though I would expect AT&T to get it on board fairly soon. We'll see. Would be a nice feature.

As for the tile question, some you can disable in the settings of the app itself, if you don't see an option there, then check where the posted above me mentioned.
