How to rollback from Windows 10 Mobile Insider preview?

I'm on windows 10 mobile build 10166 on my Lumia 640XL which was with Windows 8.1 Update while out of the box.Now my concern is when I'm rolling back to win 8.1 using recovery tool will it be restored to the same update 2 or should I check for updates?

It will be restored to the last available software release. In case of the 640XL it was Update 2

I recently rolled back due to the fact that some of my videos wouldn't play and office appears to be a subscription based app now. The rollback was flawless, by the way.
