If I purchase a Band 2, what happens to all my Band 1 fitness/sleep data?

Let's put it this way - I've changed Bands trying to get the right sizing. You may lose the data for the day you swap the Band, but the history is in "the cloud" and will still be there.

I've noticed that MS Health now has a function for switching bands, so it may be even smoother. Just make sure to sync before your done with it.
